My Boys

This picture makes me want to get another bulldog puppy!!!! Little Rooney is so sweet and innocent in this picture {boy did he have us fooled}.  And his brother, Buerly, looks sooooooo incredibly thrilled to be sharing his backseat with the little demon child! 

Hmmmmm.......maybe I can convince Hubs {and our bank account} that we should get another one......lol.

This morning Rooney woke up before our alarm went off.  He meandered over to my side of the bed.  He started crying, yodeling and carrying on because he wanted to get into bed with us.  I was still half way asleep so I ignored him in the hopes that he would just let me get those last few precious minutes of sleep before the alarm started squawking.  So Rooney gave up and wandered over to Hubs side of the bed.  He started growling, barking and screaming at Hubs {notice he cries for me but gets pissed at Hubs......that would be my dog.....lol}.  Hubs eventually rolled over and patted on the bed for him to jump up {sucker}.  Once Rooney jumped up into bed he burrowed underneath our comforter and fell right asleep, happy and content. 

I swear, he is the most vocal dog I have ever owned/seen.  He talks back, screams when he is pissed, whines when he wants something and shrieks if you don't give in to what he wants.  I really wish I knew what was going through that little head of his.  I am sure it would be pretty amusing.

I have a severe case of.....

spring fever!  

Dear Winter,

I promise, I will make this short and sweet.  I welcomed you and embraced you when you came to town back in November/December but you are beginning to overstay your welcome.  Your dreary skies, snow and cold temperatures are no longer welcome here.  I hate to say this, but you are beginning to depress me.  I am asking nicely that you bow out........leave town quietly and without protest.  Obviously I will welcome you back next December but for now it is time that your friend, Spring, step in.  Thank you in advance for understanding!

Cabin fever officially hit me last night.  I am so sick of being stuck indoors.

Sitting on the deck with a beer in hand.

I miss planting flowers in my flower beds, wearing summer clothes (swim suits, shorts, tank tops, and cute little sundresses), driving with my sunroof open and windows down, and the smell of fresh cut grass.

I miss {dare I say it} mowing the lawn {GASP!!! She did just say it!!!}

I miss watching Buerly and Rooney chase squirrels up trees thinking they have a chance in hell of catching a squirrel or a bird.  Or watching Rooney sunbathe on the deck while Buerly finds some shade to lounge under with his ball.

I miss being able to run outdoors without freezing my butt off {if only I could freeze 5-10lbs off my butt then maybe I could deal with running outside in the winter}.  And let's face it, I am TERRIBLE when it comes to going to the gym to work out.  I get bored and don't really care for that sweaty locker room smell.  Running outside is much more entertaining and refreshing {pretty sure I have Exercise A.D.D.}.

I miss flip flops and leaving the house without a coat.  

Anyone still reading?!? If you stuck with me through all of this jibberish then you must agree with me that I have a severe case of Spring Fever!  I could go on forever about all the things that I miss but I will spare you.  Pretty sure you get the idea! ;-)

Oh, and waking up to another dusting of snow this morning just reinforced the fact that I am COMPLETELY over winter!!!!! Ugh!  Anyone else out there starting to get spring fever?!?

It's Only Tuesday?!?

Wow! It seems like it should be Wednesday or even Thursday!  Why is it that when I wake up in the morning I wake up thinking that it should be later in the week than it really is?!? Why can't I wake up for once and think that it is Tuesday when it is really Thursday?!?  My brain and I really need to have a heart to heart about this.

Things have been CRAZY at work lately so I really haven't had much time to blog......which is a very very sad thing! :-(

But I will leave you all with two FABOOSH recipes that we tried over the last week (haha.....I love that word).  I highly recommend you try these because they are easy, quick and decently healthy.

Broccoli and Bow Tie Pasta

  • Kosher salt
  • 8 cups broccoli florets (4 heads)
  • 1/2 pound farfalle (bow tie) pasta
  • 2 tablespoons unsalted butter
  • 2 tablespoons good olive oil
  • 1 teaspoon minced garlic
  • 1 lemon, zested
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 cup toasted pignoli (pine) nuts
  • Freshly grated Parmesan, optional
Cook the broccoli for 3 minutes in a large pot of boiling salted water. Remove the broccoli from the water with a slotted spoon or sieve. Place in a large bowl and set aside.

In the same water, cook the bow-tie pasta according to the package directions, about 12 minutes. Drain well and add to the broccoli.

Meanwhile, in a small saute pan, heat the butter and oil and cook the garlic and lemon zest over medium-low heat for 1 minute. Off the heat, add 2 teaspoons salt, the pepper, and lemon juice and pour this over the broccoli and pasta. Toss well. Season to taste, sprinkle with the pignolis and cheese, if using, and serve.

To toast pignolis, place them in a dry saute pan over medium-low heat and cook, tossing often, for about 5 minutes, until light brown.

My recommendations- 1.) Forget the pine nuts (unless you love them).  I was WAY too lazy so I skipped out on these the second time I made this dish and I am glad I did.  2.) If you like a little spice.....add a couple shakes of red pepper flake to the garlic butter glaze.  VERY yummy!!!!  3.) Instead of Parmesan cheese I used the Kraft Shredded 5 Cheese Italian.


Chicken Parmesan Bundles


4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 pkg.  (10 oz.) frozen chopped spinach, thawed, well drained
1-1/4 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
6 Tbsp.  KRAFT Grated Parmesan Cheese, divided
6 small boneless skinless chicken breast halves (1-1/2 lb.), pounded to 1/4-inch thickness
1   egg
10 RITZ Crackers, crushed (about 1/2 cup)
1-1/2 cups  spaghetti sauce, heated 
    
Heat oven to 375ºF.
 
Mix cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until well blended; spread onto chicken breasts. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.

Beat egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken in egg, then roll in crumb mixture. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.

Bake 30 min. or until chicken is done (165ºF). Remove and discard toothpicks, if using. Serve topped with spaghetti sauce and remaining mozzarella.
 
My recommendations- 1.) Utilize the healthy living tips.....the taste is just as good and less calories.  2.) I used a 1 1/2 lb package of chicken (3 chicken breasts) and pounded them thin.  I was only able to eat half of a bundle.  They are HUGE!!!!

It's an Obvious Statement....

.....but I survived my first time skiing! YAY!!!!

And the best part?!? I LOVED skiing! I cannot wait to go back!  We are working on planning another ski weekend in the very near future (maybe in two weeks).

I may not be an expert skier but I made sure that Hubs and I dressed the part!   Half the fun is getting the cute ski clothes! lol

The scariest part of skiing was the darn ski lift.  It is amazing how many people wipe out attempting to get off the lift.....it's also pretty amusing when it isn't you wiping out.  I know, I am mean but at least I am honest. 

Here is a quick recap of the weekend:
Saturday- We woke up early to drive out to Perfect North Slopes.  I was really nervous once we arrived.  Hubs and I put on all of our gear and walked to the front.  Piece of advice to any newbie skiers out there- DO NOT, I repeat, DO NOT put your ski boots on out in the parking lot and walk all the way to the lodge because your shins and feet will hate you.  They will want to disown you.....seriously.  

Once we had our boots and skiis on we made our way to the lesson area.  Hubs had skied several times but was going to attempt snow boarding on this trip.  We went our separate ways to start the lessons.  I decided to skip Stage 1 (learning how to put your boots in the bindings).  I know, what a rebel!  Shhhhhh, don't tell anyone! I made it through Stage 3 when one of the instructors told me to skip the remaining stages and go straight to the slopes.  Major ego boost! 

I attempted my first slope and made it down without falling once.  Victory is mine!  So I went to find Hubs.  Unfortunately he was not having the same luck since it was PACKED and there were tons of people taking the snowboard lessons.  In the end he switched back to skis so that we could hit the slopes together.  

Later in the day four friends from college met up with us.  My friend, D, stuck with me on the easier slopes while the rest went out on the more advanced slopes.  Once it got dark it started to get REALLY cold so we called it quits and found a restaurant to grab dinner at.  

Sunday- Hubs and I slept in, grabbed breakfast and waited on my bestie and her husband to arrive.  Once we were all packed up we headed back out to the slopes.  We spent most of the day skiing, though we took several breaks because it was soooooo packed with people.  By dusk the place had cleared out quite a bit.  The lines for the lifts were no longer unbearable but it was also starting to get really cold.

Hubs, bestie and bestie's husband wanted to go down some of the more advanced hills.  I decided to go hang out in the car and attempt to de-thaw.  The car was parked right where the lifts were so I was able to see them coming down part of the run.  Bestie called it quits after a run or two and joined me in the car.  It felt soooo amazing to get those ski boots off! My feet and shins were thanking me.  It was also nice to share a couple of brewskies while we waited on our crazy boys.  Those boys were like two little kids at an amusement park.  After each run they would ski up and ask us if they could go again, of course we said yes. 

Monday-  We had planned on going skiing but the weather was terrible.....well, perfect for skiing but not great for getting back home!  Counties around us were going into snow emergencies so we decided to skip town and hit the road.  An hour and fifteen minute drive turned into over a two hour drive but we finally made it home safely.  

The weekend was AH-MAZING! I had so much fun and not to toot my own horn but this girl never fell once! It was a great time with wonderful friends and I cannot wait to do it again!

I was a slacker and took zero pictures but my bestie took some pictures so as soon as she gets those uploaded I will post some more pictures.

And now I feel stupid......

When I went to grab the dog food this morning I noticed that my garage door was open.  Not good! But I went about my normal morning routine assuming that the stupid snow had caused the door to pop back up.

I kissed my husband good-bye and continued getting ready after he had left.  I eventually jumped into my car, backed out of the garage, hit the garage door button annnnnnnd nothing.........absolutely nothing! No light, no blinking, no motion......nothing.  EFF!

Apparently the string got shut in my car door and when we went to shut the garage door it disengaged the garage door.  I could shut the door manually but that was it.  

So, I called my dad for help.  Logical thing to do, right?!? Right!  He explained to me exactly what I needed to do over the phone.  Unfortunately, I am a visual person and the explanation just wasn't doing it.  So my dad said he would be right over to help me out. 

Once my dad got to the house it literally took him 10 seconds to fix.  After watching what he did to fix the garage his instructions made complete sense.  The light bulb was burning bright but boy did I feel stupid!!!!
At least now I know how to fix our garage door!  Thank goodness it is Thursday!!!!

Super Bowl Weekend

I know, this post is VERY late. So here goes-

Friday:
Hubs' parents drove down to spend the weekend with us. They were originally going to come later in the afternoon but with the crazy snow storm they decided to leave early that morning which meant I was able to leave work early to meet them at the house. Lucky me, right?!?

Since I was able to leave early I made Hubs take the Tahoe (aka- Big Gray Bus) and I took his Mercedes (aka- SHITTY in snow and by 'SHITTY' I mean VERY SHITTY). I left work before the snow really started coming down so I didn't have any issues getting home. I did receive a text from Hubs prior to leaving. It read- "Buy beer ASAP......just in case." So while most people were out buying eggs, milk and bread this girl was out purchasing cases of beer. Priorities people, priorities!

Once Hubs made it home we all decided to go to Ichiban. Yes, we were those crazy people out on the roads risking our necks for the sake of some delicious sushi. So worth it! The Big Gray Bus got us to and from safely. Gotta love an SUV with awesome tires! And the best part?!? Sammi, the owner of Ichiban, sent over some free rolls and salad as appreciation for coming during a snow storm (we are regulars).
These were later in the day on Friday. We were hit again with another round of snow Friday night and into Saturday morning. Hubs had to shovel a path from the deck to the grass for Buerly and Rooney.

Saturday:
We didn't really have any plans for Saturday but it somehow turned into project day. I had mentioned to my FIL that I would love to install cabinets in my laundry room for added storage. Ummmm.......what girl doesn't want extra storage space?!? So my FIL and Hubs went to Home Depot and picked up everything necessary to complete the project. Oh and did I mention that my wonderful FIL hung all of my shelves, pictures, and wall decor on Friday? Pictures to come soon!
This is the 'before' pictures of our laundry room. You will have to wait to see the after picture. I know, shame on me for leaving you all in suspense! ;-)

And what kind of home project is complete without a gift wrap roll sword fight?!? I mean, seriously, have you ever made it through a DIY project without one of these?!

Sunday was obviously Super Bowl Sunday. Unfortunately my team did not win so there really isn't too much to say! J/k......kind of. We had a wonderful time with our friends and family! Good food, good company and good times. What more could you ask for?!?

Working for the Weekend!

Okay, I am finally over mourning my Colts Super Bowl appearance........j/k.......okay, maybe not. Monday was a wasted day (aka recovery day) and the rest of the week has been extremely hectic! But I am back!!!! :-) I will have a recap of the weekend soon.

Sooooo.......guess what this girl is doing for Valentine's day/President's day weekend!?

SKIING!!!! I am so incredibly excited! After all the snow we have had the conditions are perfect!

You want to hear the funniest part about all of this?!? I have NEVER skied in my life! Yep, you heard me right, never ever skied!

But my Hubs is so sure that I will absolutely love it, he went ahead and bought me a pair of ski boots. Plus, the boots were on a RIDICULOUS sale!** I know that skiing and water skiing are totally different but I figure that if I could learn how to water ski behind a wave runner (which by the way is a very hard thing to do) then I can learn how to snow ski. At least this is what I keep telling myself. Let's hope this theory holds true! lol

So blogland, if you don't hear from me next week I am probably in a hospital or worse. J/K.....hopefully! But seriously, to all you skiers out there, any tips for this newbie?!?

I Have An Addiction.....

and it is serious.

Hi! My name is Laura and I am addicted to Pottery Barn.

My addiction started about two years ago when Hubs and I purchased our home. Prior to that I never had any cravings or issues because we lived in an apartment. I didn't want to purchase items for an apartment that we would not be living in for a long period of time. But as soon as we purchased our home the cravings started. They were small at first but grew each month.....usually around the time that the Pottery Barn catalog would grace our mailbox.

After two years I have come to terms with my addiction. It has not only affected me but has affected all those around me; Hubs, Buerly, Rooney, my credit cards, our trash pick up, and Fed Ex. Our garbage man is probably going to go on strike if he sees one more pile of boxes from Pottery Barn and I am pretty sure that our Fed Ex driver is going to request a relocation if he has to deliver one more of those heavy boxes to our front porch.

Buuuuuuut.......just one more shopping trip couldn't really hurt anyone.......right?!? I promise, this will be the last time! I PROMISE!!!! ;-)

Disgusting

I try not to rant too much on this little ol blog of mine but after reading this article I was appalled to say the least okay maybe horrified would be better description!

"First it was the Real World, then came the Jersey Shore. Now, a new pseudoreality show is hoping to make an impression – only this time the cameras are following three actresses pretending to have unwanted pregnancies, and whether or not they decide to get an abortion is up to the viewers.

The "Bump" was conceived after President Obama's commencement address at Note Dame University last year where he said he wanted "to find ways to communicate about a workable solution to the problem of unintended pregnancies," executive producer Dominic Iocco told The Washington Post.

The pilot was launched on the eve of the 37th anniversary of Roe v. Wade, and starting Feb. 1 episodes will air twice a week on the show's Web site, BumptheShow.com and YouTube.

Creator's say the idea is to humanize the debate, according to the Post.

The three stars of the show are in different predicaments, including, one who is married but got pregnant after her husband's departure to Iraq, a victim of domestic violence and another who just wants to be on a TV show.

Comments are welcome, although they are closely monitored to ensure civility, Iocco told the Post."

REALLY?!?!?!?!? Has America really stooped this low?!? I am just horified that someone thought this show would be a good idea. Hello moral compass......where the heck are you?!?

I, personally, am against abortion due to my religious views. But whether you are for it or against it I really do not think that this so-called show is going to humanize the subject. How dare some male producers turn something so personal into a "game."

I am so utterly disgusted that I really don't have much more to say about this!

Food, Food and More Food

As I mentioned here in my post yesterday, Hubs and I are hosting a party on Sunday to watch the big game. I decided that I wanted to mainly stick with appetizer/finger foods. You know, snack-y football food!?

So here is my menu as of today:

Turkey Wonton Cups:
Our neighbor made these bad boys for us one night and they were delish! I was addicted! The only changes I made to the recipe was to substitute Bleu Cheese dressing for the Ranch and to leave out the green onions {not a fan of green onions}. Either way the recipe is quick, easy, and decently healthy.

Baked Crab Rangoon (Hub's favorite):

We have never tried this recipe before but Hubs LOVES crab rangoon so we will give it a try!

7-Layer Taco Dip:

Easy, quick, and always a crowd pleaser!

Buffalo Chicken Dip:

Once again, I use Bleu Cheese dressing {Marzetti's has the best} instead of Ranch. This dip goes great with tortilla chips.

Pineapple Pecan Cheese Ball (co-workers recipe):
This cheeseball is AH-MAZING and highly addicting. The combo of ingredients may not sound appetizing but trust me, it is a palate pleaser!

3 pkg cream cheese (8 oz)
1 large can of crushed pineapple in its own juice
1 large pkg of thinly sliced beef (chopped finely)
2 oz pkg of pecans (finely chopped)
Several dashes of onion powder (season to taste)

Add most of the can of crushed pineapples to the softened cream cheese (save the pineapple juice). Add beef, onion powder and 1/4 of the chopped nuts. Add more juice for sweetness or onion powder as needed. Mix thoroughly (I use my hands for this) and form into a ball (or football) shape.

Spread rest of nuts on plate and roll ball until covered. Place ball in double sheets of foil and place in the refrigerator. Let set for 4-6 hours minimum. Onion crackers go great with this cheese ball!

Italian Sausage with Hoagies for sandwiches:
This recipe is sooooo easy and the clean up is great!

1 pkg of Johnsonville Italian Sausage (Mild or Hot)
1-2 Green Peppers
1 Onion
1-2 large cans of Tomato Sauce
1 large Reynolds disposable aluminum baking pan (deep walls)

Preheat oven to 350 degrees. Cut the Italian sausage in halves or thirds and throw into pan. Thinly slice the onion and green pepper and throw into pan. Top everything off with tomato sauce until sausage and peppers are covered. Bake uncovered for 35-45 minutes. Remove foil and bake for additional 15 minutes.

Best served with mashed potatoes or with Hoagies to create a sandwich.


Along with all the appetizer/finger foods I plan on whipping up some desserts. I am thinking brownies shaped like footballs, football Rice Krispie treats and Funfetti Cupcakes.

Bienvenidos a Miami

I know that this is a little overdue but better late than never! Right?!

The Colts played the Baltimore Ravens in the first round of the AFC Playoffs. The game was at 8:30pm on Saturday, January, 16, 2010. My parents have had season tickets since the Colts came to Indianapolis. Luckily my parents REALLY love Hubs and I because they invited us to all the playoff games! :-)

Thanks to the large number of people who came into town for the game and the 30,000+ cheerleaders in town for a competition we knew we would have to get downtown early. So, at 5pm we headed downtown with our fingers crossed that we would be able to find a place to eat (all restaurants were booked or not taking reservations). First on our stop.....The Claddaugh....my favorite!!!! The atmosphere at the Claddaugh is so electric, especially on game days. Irish rock music, TONS of beers on tap (including Hubs favs- 312 and Guinness), and great food make for an awesome place to pre-game.

I found it funny but I am sure most Baltimore fans didn't find it as funny.

On January 24, 2010 at 3:30pm the Colts played the Jets for the AFC Championship. Let's just say that out of all the fans that I have ever encountered these were the worst. They were very cocky, disrespectful, rude, attempted to start fights, smoked pot on the streets of Indianapolis, etc (I am sure there are GREAT fans too but unfortunately we did not encounter any of these).

I feel as though the above paragraph does not justify our encounter well enough. The night before the game Hubs and I went out to dinner with some friends. We went to Harry & Izzy's (the same nice restaurant that we had our rehearsal dinner at....go here to see pictures). Nice......right?!? Before we could even sit down there were drunk people screaming the 'Jets' cheer and a guy walked into the restaurant wearing a 'Peyton Manning F***ing Sucks' t-shirt. Ummmmm......can we say dress code violation and vulgar?!? Fans of the opposing team were talking about how Indiana was nothing but a state of hicks who serve terrible food. Dinner was complete HELL!!!! It was the most miserable, degrading dinner I have ever sat through. The only thing that left me amused was the fact that these 'fans' were talking about how much they hated Manning yet they were eating in a restaurant that is OWNED by Manning. Haha! Keep ordering those bottles of wine!

Whew! Sorry for the rant but it was needed!

Okay back to game day. We attempted to go to The Claddaugh again but before we even got there we heard "J-E-T-S JETS JETS JETS!" Eff! Our fears were confirmed. Once there all we saw was a sea of green. Greeeeeaaaaat! And after constantly listening to the 'Jets' cheer the night before Hubs and I knew that we did not want to deal with it. So we walked on to the next bar- Ike and Jonesy's. Very fun bar! The only colors we saw when we walked in were blue and white.......much better!

And we just so happened to run into one of my really good friends from college, C!

The entire stadium was LOUD the entire game. It didn't get any quieter after the Colts won either!

Funny Story- Reggie Wayne showed up the first day of training camp back in August in a dump truck wearing a hard helmet and construction outfit. The helmet said, "Super Bowl team under construction." Talk about motivation!

Well blogger-land friends.......the Colts are Super Bowl bound and this girl couldn't be happier! Unfortunately I am not going to be in Miami for the big event but my parents will be there rooting on the Colts {lucky lucky them}.

Instead we will be hosting a party at our house. My MIL, FIL, aunt, uncle and friends are all coming over to watch the game with us. So you know what this means?!? I will be making lots of fun football snacks for the game! :-)

Catalogs

Has anyone ever heard of/shopped from Home Decorators Collection?!?


I just received their catalog and found a piece of furniture that I LOVE!!! I am hesitant to order anything because I know absolutely nothing about this company. So while I do a little bit of investigating on my own; I ask all of you in blogger land to let me know the good, the bad and the ugly about this company if you have ever ordered anything.
