Brrrrrrrr!!!!!!

It is COLD FREEZING outside which means perfect soup weather!  My all time favorite soup to get when I am at Olive Garden is the Pasta E Fagioli.  Mmmmmmmm.......breadsticks and soup.  Sadly, we do not live that close to an Olive Garden so I took to the internet to find the perfect recipe. 

Pasta E Fagioli
Recipe from Food.com

3 tsp Oil
2 lbs Ground Beef
12 oz Onion, chopped
14 oz Carrot, slivered
14 oz Celery, diced
48 oz Tomatoes; canned, diced
2 c. cooked Red Kidney Beans
2 c. cooked White Kidney Beans
88 oz. Beef Stock
3 tsp. Oregano
2 1/2 tsp. Pepper
5 tsp. Parsley, chopped
1 1/2 tsp. Tabasco Sauce
48 oz. Spaghetti Sauce
16 oz. Ditali Pasta

Saute beef in oil in large 10-qt stock pot.  Add onions, carrots, celery and tomatoes and simmer for about 10 minutes.  Drain and rinse beans and add to the pot.  Also ad beef stock, oregano, pepper, Tabasco, spaghetti sauce and noodles.  Add chopped parsley.  Simmer for 45 minutes. 

Recommendations-
  • Cut this recipe in at least half unless you want to eat Pasta E Fagioli for two weeks straight (not even kidding.....this recipe makes 9 quarts when all said and done).
  • Wait to add the noodles until the last 15 minutes otherwise they become soggy.

Hubs and I LOVED this recipe!  It tasted so much like the Olive Garden version.  Of course, since we followed the quantities in the recipe we had LOTS of leftovers.  I am pretty sure my co-workers loved me the next day and the day after that.....lol. 

Sorry, I forgot to capture a picture of the finished product but I can safely say that it looked like the Olive Garden version.  I even bought fresh Parmesan and used my Pampered Chef Cheese Grater (just like they use at Olive Garden). All in all, I give this recipe two thumbs up!
